Caribbean Curry Chicken

Perfectly Seasoned Curry Chicken made wi


(6-8 servings)

2lbs of chicken pieces (with or without bones)

1 garlic clove chopped

1 tsp of freshly grated ginger root

1 onion diced

1/2 lb of fresh green beans

1 red, yellow,orange, and green pepper diced

5 small yellow potatoes cubed

14oz can of unsweetened coconut milk

56 oz of chicken broth

1 TBS of cooking oil of choice

4 TBS Perfectly Seasoned Caribbean Curry Seasoning Blend

2 TBS Perfectly Seasoned Caribbean Epis Seasoning Blend

Additional salt and pepper to taste


In a large pan saute garlic, onions and peppers in the cooking oil. Add seasonings, ginger, and chicken to with pepper garlic mixture and brown. Once the chicken is brown add chicken broth and coconut milk.  Bring contents to a simmer, then add the potatoes and green beans. Simmer on low heat for 1hr. Serve over rice.
