Sweet and Sour Swordfish
Ingredients: 3/4lb swordfish steak, 1/2 cup cornstarch, 1tsp chopped garlic, 1tsp grated ginger, 1/2 cup honey, 1/2 cup apple cider vinegar, 1 cup chopped pineapple cubes, 1 cup fresh green beans, 1 1/2 cup of sliced (red, yellow, orange) peppers, 1 cup of sliced onions, juice of 1 lime, 2 TBSP olive oil, and Perfectly Seasoned Salt-Free All Purpose Seasoning Blend.
Generously season cubed swordfish steaks with Perfectly Seasoned Salt-Free All Purpose Seasoning Blend. Toss seasoned swordfish in cornstarch and set aside.
Sweet and sour sauce: Mix, honey, apple cider vinegar, chopped pineapples, ginger, garlic, and the juice of 1 lime (set aside).
Pour oil into a heated large skillet. Saute swordfish until golden brown on medium heat. Add onions, peppers, and green beans to the pan and saute for an additional 3-5 minutes. Add sweet and sour sauce to the pan and allow sauce to come to a simmer. Coat veggies and swordfish and serve over rice.
